Week #1
Yam
& Pecan Salad
Here is a great
salad idea for winter when it is a little harder to find leafy greens. Yams are
high in Beta Carotene and the mustard, cayenne, cinnamon & cumin will warm
you right up! Enjoy :-)
Yam & Pecan Salad
1 lb yams, unpeeled but well scrubbed.
1/2 red bell pepper, cut into thick strips.
1/4 cup vegetable oil
1 tsp. mustard seeds
pinch cayenne
pinch cinnamon
pinch ground cumin
1/3 cup pecan halves
3 Tbsp lime juice
1 tsp. sesame oil
1/2 tsp. salt
1/2 cup thinly slivered red onions
few sprigs fresh coriander chopped.
1. In large saucepan cover yams with plenty of water and bring to a boil. Cook
for 10 minutes, then drain. Cut yams into rounds 1/2 inch thick.
2. In prepared baking dish, arrange the sliced yams and red pepper strips in a
single layer. Bake in the preheated oven for 12 to 15 minutes, until the yams
are easily pierced with a fork.
3. Meanwhile, in a frying pan, heat the oil over medium heat for 1 minute. Add
mustard seeds, cayenne, cinnamon and cumin, and stir-fry for 2 minutes, or until
spices begin to pop. Add the pecans; stir-fry for 2 minutes until the nuts have
browned a little on both sides (careful not to burn them). Remove from heat and
reserve spices in pan.
4. Remove yams and red peppers from the oven. Using a spatula, carefully transfer
them onto a serving plate, making a single layer.
5. Drizzle lime juice and sesame oil over the yams and sprinkle with salt.
Scatter slivers of red onion on top. Using a spoon and a rubber spatula, scrape
contents of the frying pan (pecans, oil and spices) evenly over the yams. Let
salad rest for 10 to 15 minutes, then garnish with the chopped coriander and
serve.

Lasagna
is an all time favorite dish for many pasta lovers. This recipe is
amazing! Give it a try...You'll love it!!
Bella Lasagna
to begin you will need the following:
1 pkg spinach
1 tomato
1 onion
1 red pepper
1 green pepper
1(2)bags of baby carrots
3(4) garlic cubes
1 box of lasagna
1 can (your choice) tomato sauce (hot&spicy)
1 large block of mozzarella cheese (grated)
1 large block of marble cheese (grated)
First you will wash all vegetables and place them in a large sauce pot
(turn stove on to medium once vegetables in turn up a bit)
use spinach first once it simmers down you will add the carrot chopped
up onion ,red and green pepper, tomato and garlic cover pot.
once vegetables are steamed
add your tomato sauce and other seasonings (black pepper, seasoning
salt...)
Turn the stove down to a min and let cook for about 15-20 min. (add
parmesan cheese to your sauce emmmmmm...)
While the sauce is cooking put another pot of water to boil to add your
noodles.
set oven to 450
take out a lasagna dish and spread your sauce then some mozzarella
cheese, some marble cheese after repeat noodles, sauce, cheese
once it there is no more sauce place tray in oven
turn down to 350 cook for 20-30 min

Week #3
Rich
& Creamy Hot Chocolate
(from The
Treasury of Country Recipes - Land O Lakes)
Everyone I
know LOVES Hot Chocolate! This recipe is great after a long hard afternoon
of playing outside in the snow :-)
Rich &
Creamy Hot Chocolate
1/2
cup semi sweet real chocolate chips
1/2 cup sugar
1/2 cup water
Pinch of salt
5 1/2 cups milk
2 cups whipping cream
2 tsp. vanilla
Optional Additions:
Liqueurs
Grated chocolate
Grated Lemon Rind
Grated Orange Peel
Cinnamon
Nutmeg
In a 3 qt. saucepan, melt chocolate chips over low heat stirring
constantly.
Stir in sugar, water & salt.
Cook over med. heat, stirring constantly with wire whisk, until mixture
comes to a full boil. (4 to 5 min.)
Boil, stirring constantly, 2 min.
Stir in milk and whipping cream, and continue cooking over med. heat
stirring occasionally until heated through (12 to 15 min)
Do Not Boil!!
Add vanilla
Beat with wire whisk or rotary beater until frothy.
Pour into mugs. If desired, add 1 to 2 Tbsp. Liqueur to each serving.
Top each serving with a dollop of sweetened whipped cream.
Garnish with chocolate, lemon peel, orange peel, cinnamon or nutmeg.
Enjoy!!
